Great steaks are elusive, but you can cook a FANTASTIC grilled steak at home using this method from Nicole Brisson, executive chef at Carnevino.     I'm most interested in how long you could utilize the rosemary & garlic wrapped in a cheese cloth mixture for and what would be the best way to store it. Seems like a great application, but one that might not be applicable for a home environment.

    A gorgeous aged steak but the steak in the video is Rare not  Med Rare.  Medium rare is 130-140. 😉 

    Everything looks good but doesn't all that olive oil at the end muddy the palate and subtle flavor profiles? Seems excessive to me.

    I enjoyed the simplicity of this recipe but, I prefer a balsamic marinade and montreal seasoning myself.
