Malteser Cake

Food Ingredients:
1 Base: 100 grams butter 1 deciliter 5 sugar 2 deciliters flour 1 teaspoon 5 vanilla essence 1 egg yolk 2 Base: 3 eggs 1 deciliter sugar 3 tablespoons warm water 2 tablespoons cocoa powder 80 grams chopped pecans 3 tablespoons cornflour Between: 300 milliliters Blackcurrant Jam Top: 500 grams cream cheese 75 grams dusting sugar 1 teaspoon 5 vanilla essence 1 Grated rind& juice of small orange 50 grams dark chocolate,grated 12 grams gelatin powder 100 milliliters hot water Maltesers

Recipe preparation:
1 Heat the oven 200 C. 2 Rub the butter,sugar & flour with your fingertips until the mixture resembles breadcrumbs. 3 Add egg yolk & vanilla essence,work to a smooth dough. 4 Roll the pastry out on a floured surface & use to line a 23 cm tart tin,lined with baking paper. 5 Brick the bottom with fork. 6 Bake for 15-20 min until golden. 7 Cool on wire rack. 8 For making the second base,separate the eggs. 9 Whisk the egg yolks with sugar & warm water until creamy. 10 Mix together cocoa powder,cornflour & chopped walnuts. 11 Whisk the egg whites until stiff. 12 Mix together egg yolks & nut mixture. 13 Gradually stir in the egg whites. 14 Pour the mixture into the 23 cm round baking tin,lined with baking paper. 15 Bake 20 min or until ready. 16 Cool on wire rack. 17 Now make the cream for the top. 18 Mix together cream cheese & dusting sugar,then add the orange rind & -juice & vanilla essence. 19 Beat until smooth,then stir in the chocolate. 20 Pour 100 ml of boiling water into the cup.Sprinkle the gelatin over,stir it around until completely melted. 21 Add the melted gelatin into the cream,stirring all the time until well combined. 22 Place the first cake base on to the serving plate.Spread over the blackcurrant jam. 23 Put the second cake base on top. 24 Spoon the cream over the cake.Decorate with as many Maltesers as you like. 25 Let it chill for few hours before serving.
