Low Fat Vegan Recipes 6

In this part of my low fat vegan tutorial series I cover a few Middle Eastern and Mediterranean classics. We make whole wheat Pita Bread, Pita Chips, Sun Dried Tomato Hummus, Baba Ghanoush and an amazing Chickpea Sweet Potato soup.

I might be strange, but I prefer to eat my hummus warm. I normally stick it in the pita bread and then cook it at 450 degrees for 5 minutes. If you have any recipes that you think I’d like leave them in the comments below.

Whole Wheat Pita Bread

Blend the following
1. 1 1/2 Cups Whole Wheat Flour
2. 1 1/2 Cups White Bread Flour
3. 2 1/2 tsp Quick Rise Yeast
4. 1 1/2 tsp Salt
5. 1 tsp Sugar
6. 1 1/3 Cup of Warm Water

Knead the dough a little by hand then coer with a warm towel and let sit for 1 hour

Pull off a golf ball sized piece and roll each ball flat 5 to 6 inches and flour both sides

Bake for 5 minutes at 500 degrees

Pita Chips

Cut Pita Bread into wedges and split in half

Place wedges onto a non-stick pan rough side up and bake for 5 to 10 minutes at 350 degrees

Sun Dried Tomato Hummus

Add the following to a blender
1. 1 15 oz Can of Chickpeas Drained
2. 1 15 oz Can of Chickpeas not drained
3. 2 TBs Minced Garlic
4. 2 TBs Lemon Juice
5. 1 tsp Cumin
6. 1/2 tsp Paprika
7. 4 TBs Toasted Sesame Seeds
8. 1/4 Cup Fresh Basil

Add 1/2 Cup Drained Sun Dried Tomatoes

Add Salt and / or Chili Powder to Taste

Baba Ghanoush

Remove skin from Eggplant

Cut 1 Eggplant into 1/4 inch rounds

Roast Eggplant for 7 minutes in the broiler flipping once

Also add the following and blend til smooth
1. 1 TBs Minced Garlic
2. 1/2 TBs Lemon Juice
3. 3 TBs Toasted Sesame Seeds
4. 1 TBs Fresh Basil
5. Eggplant

Add Salt to taste

Chickpea / Sweet Potato and Rice

Add 1/4 Cup of Water to a pan on Hi

Add 3 Onions cut into Strips and cook until soft (5 Minutes)

Add 2 tsp Cumin

Add 2 tsp Coriander

Stir til combined (Few Seconds)

Add the following bring to a boil and then simmer at 20% for 40 min
1. 4 Cups Vegetable Broth
2. 1 Cup Orange Juice
3. 2/3 Cup Jasmine Rice
4. 3 Cups of Cubed Sweet Potato
5. 2 15 oz Cans of Chickpeas Drained

Season with Salt and Pepper to taste

    become hollow in the middle? Does that just happen naturally?
