Light Thai Chicken Stir Fry Recipe ~ Noreen’s Kitchen

After a holiday that was most likely filled with a bit of over indulgence, it always seems to be the trend that we start to try and eat a bit lighter in the new year. So with that in mind, I have made a delicious light Thai chicken stir fry filled with the flavors that you love and you are not going to miss a thing!

This is chock full of delicious Thai flavor. Don’t let the large ingredient list put you off. I have tried to make this as simple as possible and give you a really great flavor like your favorite Pad Thai. You can mix and match but do not leave out the soy, the fish sauce or the ginger and garlic. Those are integral.

This was so delicious! We served ours with some Japanese ramen noodles and it was perfect!

    The thing I like about stir fry is the veggies aren't over cooked, and retain some crunchiness (carrots in this case being over fried then steamed). Flavors are great, didn't see stem in the cilantro (unlike parsley this is where most flavor is). Looks great, I'd eat it.

     I just love watch your cooking shows!  I find with so many I get bored with their cooking videos, but I am addicted to watching yours!  I feel like I'm in your home. I have dogs and a cat too, and I live in an old house with a big kitchen with the old large white porcelain kitchen sink.     Looks really GOOD! I would finish it off with some fresh ripped Thai Basil leaves with yer Cilantro.
    Also, you can make a light chicken broth, add lime leaves to it and fresh pieces of lemon grass. Strain it, and pour over noodles and chicken. It's amazing!
