I actually quite liked this video, good camera, good lighting, keep it up
I liked how there's no guess work when cooking the filling. Its first brought up to 62°C in a bain marie then cooked in the tart case bringing it up to 70°C. This will guarantee it setting whilst having that slight wobble. I also had trouble with the pastry technique Heston uses, but managed to sort it in the end 🙂
