Lady and Sons Fried Pork Chops (Paula Deen)

Lady and Sons Fried Pork Chops (Paula Deen)

OMG this is such a good recipe.

6 cups vegetable oil
2 teaspoons House Seasoning (recipe follows), divided
1/2 teaspoon seasoned salt
6 pork chops
1 cup buttermilk
1 cup all-purpose flour

Directions

Heat oil in a large, heavy bottomed pot to 350 degrees F.

Sprinkle the seasonings on both sides of the pork chops, rubbing them thoroughly into the meat. Pour buttermilk over meat and turn to coat on all sides. Season flour generously with House Seasoning, roll each chop into flour, and shake off the excess. Carefully place the chops, 2 at a time, into the hot oil, and cook until the outside is golden brown. Take 1 chop out and make a small cut at the thickest part to check for doneness; adjust time accordingly for the rest. Drain on paper towels before serving.

House Seasoning: ( I made only 1/4 of this and still had PLENTY leftover)

1 cup salt
1/4 cup black pepper
1/4 cup garlic powder

Mix ingredients together and store in an airtight container for up to 6 months.

    Can u use milk. We dont keep buttermilk?

    This is what makes the dish. You need the buttermilk. Google how to make your own. I can't remember the ratios or I would tell you. Just add lemon juice or vinegar to the milk. I think it's a cup of milk minus a tablespoon. Then 1 tablespoon of vinegar or lemon juice. Let sit 5-10 minutes to allow it to curdle. Then proceed

    We dont have buttermilk in uk either but there are substitute recipes by mixing full milk with lemon juice.

    or you get some whipping cream, make your own butter it's better than store bought then pour off the liquid it is now buttermilk and sooo good, and fresh butter to boot

    will try that…though lemon juice in full fat milk works as an adhesive for that fab crunchy coating!!!

    True….but still better off doing it my way get whipping cream or double cream or whatever they call it there. Leave out on counter top for a day or so, 2 days if weather is cool then blend away. Once the butter forms, you will know when, pour off the milk ( butter milk now ) then keep putting ice cold water into butter 2 or 3 times till water is clear. Now you have the best butter in the world, and you have control as to how much salt you have in it or don't have in it ps discard the water.
