Improv Mac and Cheese

Food Ingredients:
8 ounces macaroni noodles – I used Conchiglie noodles 4 ounces extra sharp grated Cheddar 2 1/2 ounces grated Gruyere 3 ounces grated Jack cheese 3 ounces grated Smoked Gouda 2 tablespoons shaved Parmesan 2 cups of 2% milk 3/4 cup heavy cream 1/4 flour 3 tablespoons unsalted butter 1/8 teaspoon cayenne 1/8 teaspoon nutmeg 1/8 teaspoon pepper 1 teaspoon kosher salt Crumb top 15 butter crackers 4 ounces shaved Parmesan

Recipe preparation:
1 Preheat oven to 350 degrees 2 Grease a 9 x 12 baking dish 3 Warm milk and cream in a separate sauce pan 4 In a larger sauce pan, melt butter 5 Add flour and cook for one minute until melted 6 Slowly add in milk, whisking like crazy for 8-10 minutes until thickened 7 Remove from heat and stir in cheese, salt, pepper, cayenne and nutmeg 8 Set aside 9 In a large pot boil 8 oz of pasta 10 Cook for 3 – 5 minutes until pasta is al dente 11 Topping 12 In a food processor grind crackers and Parmesan together into crumbs 13 Rinse noodles in cold water and drain 14 Add noodles to cheese sauce 15 Transfer cheese and noodle mixture to baking dish and cover liberally with crumbs. Bake 30 minutes until top is golden brown.
