Chefs BC Hoffman and Judith Joes tested Alton Brown’s baked hot wings against deep fried buffalo wings from Bobby Flay to see whose will make the play and whose will end up on the sidelines.

    If you’re using the guy’s sauce and not cooking it through, at least wash
    the board and knife before chopping the garlic. Fomites! (It’s covered in
    nasty chicken germs)

    from my very limited and humble experience, dredge with flour, make your
    sauce, and grill your wings on a gas or wood pit… although it’s a bit
    more involved, the charred bits with a quick dip in the sauce and then some
    searing really did it for me, regardless of the flavor of sauce.

    I can tell by looking at both of these wings that both of yall don’t know
    anything when it comes to wings. The most important thing when it comes to
    wings is the crispiness. Both of them looked gooey and there is nothing
    more offensive and irritating than a gooey wing. I would of sent these both
    back pronto. I didn’t expect much from the british chick; as the brits are
    known worldwide for their butt food and the dude steaming them? Get real.
    Two major thumbs down and we are all more stupid for having watched this
    and most importantly; We’ve wasted precious time we will never get back.
    Shame on you both.

    You skipped the most important step of Alton Brown’s recipe! You have to
    put the wings on a rack and leave un-covered in the fridge for a long time.
    That will give you much crispier skin similar to Peking Duck. Cold air does
    magic on poultry skin.

    If you boil or steam it before baking, it actually comes out more
    tender…. But, it tastes way different. It’s not as moist on the inside
    compared to frying or baking it only.

    Never precoat wings and never bake them . Most of all never precook or
