How to make Ramen noodles from scratch: alkaline noodles recipe
Ramen noodles (also known as Chinese noodles or alkaline noodles since they are traditionally made with kansui) can be easily made at home with baked baking soda.
The dough is tough and it may take a few tries to get the noodles right, but knowing you made your own yummy yellow springy ramen noodles without industrial food colouring, additives or artificial drying agents in mass-produced packaged ramen makes it totally worthwhile.
Pair your homemade ramen with a good Tonkotsu broth (like this one: http://norecipes.com/blog/tonkotsu-miso-ramen-recipe/) and this will make it to the top of your list of comfort foods.

i needed more water. I just had a dough that would not come together. only a smiggen more. Noodles were still great if tough to roll.. really tough… without a pasta machine (manual) don't think I could have rolled them out.
Can you microwave the baking soda instead of baking it??

Thanks for sharing. I would like to ask how to bake the baking soda in the oven. Will I spread it on the baking sheet?
I'm in progress making it now. I solve the liquid issue that Lu C had by making more cooked baking soda and adding 1 cup of warm water to it. As the video said do not just add plain water. I then used the same bread flour mixture that did not seem to have enough liquid. I then slowly added the rest of the liquid to the bread flour then kneaded and continuously kneaded with a rolling pin. I would say I knead the dough for thirty minutes. I have put it in the frig now for he hour. I will be back after I start to prepare the Ramen dough for the pasta machine.

Thanks for this. I only make fresh pasta about once every five years – and every time I'm shocked at how much better it is. Then I forget about it again and can't figure out why….oh, yeah – all that work, lol!

Yeah,a pasta machine would help a hell of a lot….and wouldn't you know i don't have one. I will use the rolling pin/wax paper method and dream about my kitchen aid mixer with all the pasta attachments while rolling out this dough lol

Can't be that hard to make Ramen from scratch. Have an old pasta machine which has never been used. I've seen great prices on pasta machines at ROSS. Would appreciate any recipes or suggestions. Thanks!
