How to Make Carrot Salad

Simple Carrot Salad
1 pound of carrots, peeled and grated
1 teaspoon red wine vinegar
2 teaspoons fresh lemon juice
Salt
Fresh-ground black pepper
1/4 cup olive oil
2 tablespoons chopped parsley
Peel and grate one pound of carrots. In a small bowl, whisk together 1 teaspoon red wine vinegar, 2 teaspoons fresh lemon juice, kosher salt, and fresh-ground black pepper. Whisk in 1/4 cup olive oil and taste for salt and pepper. Toss the dressing with the carrots and stir in 2 tablespoons chopped parsley. Let the salad stand for 10 minutes, and taste, adjusting lemon juice, salt, or pepper as needed.
