He lost me at onions. Onions in Mac and Cheese? Blech!
I say add all the cheese, then put more on top!
Do the bread crumbs on top help prevent the top macaroni layer from
overcooking? That’s one of the things I have against baked pasta. I can’t
stand it when noodles are overcooked and get all hard and crunchy.

Onions? Well that’s the best way to ruin any dish.
Funny, right after this video ended, in the actual episode on Food Network
Alton shows how to make mac and cheese that tastes just like the stuff out
of the box. The casserole type mac and cheese with breadcrumbs is good and
all, but I was raised on the box stuff, so there’s a dark twisted side of
me that prefers the box to the casserole. I don’t think I’m cursed, there’s
just something tantalizing about those tender elbow noodles and that tangy
orange cheese powder with a mysterious similarity to crack cocaine…
Alton’s shirt is awesome.
Instead of chopping the onions, can’t you just grate them?
Still not sure about the onions, I might leave them out next time. BUT, out
of desperation I used plain shake’n’bake for my topping and it was SO.
GOOD. I may never use bread crumbs again.
