HOW TO FOOD PREP | VEGETARIAN | MY HEALTHY WEEKLY MEAL PREP

My shopping list this week included sweet potatoes, freekeh, cherry tomatoes, spring onions, zucchini, carrots, celery, cauliflower, beetroot, hemp seeds, red kidney beans, feta cheese, mint leaves, fresh parsley, liquid egg whites, mayonnaise and siracha sauce.

Start by preheating your oven to 210C or 425F.

♥ FREEKEH ♥ you can substitute with quinoa or brown rice.

I simmered 2 cups of freekeh in 6 cups of water for around 25 minutes. Drain once cooked.

Check your packet for the instructions.

Once the freekeh is cooked, I sprayed a pan with olive oil and added 1 tsp minced garlic paste and put my chopped fresh herbs, freekeh and some handfuls of green onoin before stirring it around for about 5 minutes.

For the dressing, I mixed of the juice from 1 lemon, 3 tablespoons of mayonnaise and half a teaspoon of garlic. I seasoned well with salt and pepper and stirred it into the freekeh. I ate these lunches cold.

♥ SWEET POTATO FRIES ♥

I peeled 7 small sweet potatoes and cut them into chip shapes. I then put them in a bag, drizzled some olive oil and seasoned with salt and pepper.

Place them on a lined baking sheet. They will take around 30 minutes to cook in the oven at 210C or 425F.

♥ CAULIFLOWER MASH ♥

I boiled a large head of cauliflower until tender before draining thoroughly and mashing it up. You can customise and season with whatever you like to make it tasty. I use salt, pepper, garlic, mustard and onion powder. I also put in some parmesan cheese and almond milk.

♥ ZUCCHINI ♥

Nothing too fancy here. I just diced and stir fried them for a few minutes in 1 tbs garlic paste and olive oil.

♥ OTHER VEGGIES ♥

Wash and chop the rest of the veggies:

– 1 head of celery
– 1 bunch of spring onion
– 1 bunch each of mint and parsley leaves
– 9 small carrots
– tinned beetroot
– I also drained my kidney beans and diced my fetta cheese

I ate these lunches and snacks over the next 5 days. Any veggies prepped which did not go into my food boxes, were kept in the fridge ready for use during the week for dinners.

    lol i like how you made your freekeh more freakier 🙂 i am going to try
    that with quinoa. i am not crazy about the flavor of quinoa, but it is a
    complete protein, so since i have had to do vegan lunches for health
    reasons, i need all the protein i can get (and now have to stay away from
    soy, it is tough to get protein) so i will have to learn to flavor my
    quinoa to enjoy it more. i also sprinkle hemp seeds on my lunches ..great
    way to get protein without even tasting anything. thanks for doing this veg
    food prep.. please continue to sprinkle in the occasional veg food prep for
    those of us who prefer the veggies…. i still love all your food prep vids
    , since i prep for my hubby as well who eats everything 🙂 .
