IMO this is by far the best technique I have come across to cutting up a
whole chicken. Very easy and less waste. Just make sure you have a sharp
knife and the kitchen shears really come in handy.
In professional kitchens, we use just a boning knife to cut the whole
chicken. One rule of thumb: you should never have to cut through bone when
cutting up a chicken. This is safer as is reduces the risk of having shards
of bone in your meat. Also, you left out the oysters! It’s the most tender
and prized part of the chicken. You should always cut the leg out keeping
the oyster intact.

This is correct, im a butcher and this is how i cut a chicken, but we use
just one knife
