i made the stock yesterday. He forgot to mention the fat layer it gets when its ready. i put it in a jar in the fridge so the white fat layer could turn into jelly and i scraped it off with a spoon. The stock also turns into gelatin in the fridge but it is liquid at room temperature. It tastes like my grandmothers fried chicken soup 🙂 .
Maybe the best part about him being a chef is that he's much calmer and gentler with food compare with ramsey, and he's not judging you that he's the michelin star chef like any other arrogant one or three michelin star chef you can name in this industry

Heh, he's actually breaking EU regulations when he's cutting up the chicken in sight of the other chickens. Like they'd even recognise the carcass at that point, but it's still against the rules. :)
I actually tried this recipe (the time consuming and hassle that this recipe is) and MY.GOD… I'll NEVER question him ever again, it's the best roast chicken I've ever had in my life… :'D planning to try his turkey recipe next, in time for the thanksgiving dinner…

Personally i like Heston more than Ramsay/Oliver. So much more calm ,relaxed and straightforward . Every recipe and trick in these 6 episodes works beatifully every time. I really wish he makes more episodes or something similar in the future
His roast chicken looks very boring. No seasoning and a boring stuffing.

This is the first time I have seen a chef that does not put the butter UNDER the skin of the bird. And, not recommend basting the bird every 45 minutes to make crispy skin, that does not dry out disgusting, as I found happens when I forget to baste….
