Hosting a Dinner Party (Part 1) – Stuffed mushroom appetizer

Grace Davis shows how to make spinach and feta stuffed mushrooms for a dinner party on a student budget.

RECIPE:

Appetizer for a dinner party

Prep time: 15 minutes

Cook time: 20-25 minutes

Ingredients

1 (300 gram) package frozen spinach, defrosted and drained
2 packages large, stuffing-size mushrooms (approx. 12 mushrooms)
Approximately ½ cup feta cheese, crumbled
2 cloves of garlic, finely chopped or pressed, or 2 teaspoons of minced garlic
Olive oil
Salt and pepper, to taste
Directions

Preheat oven to 350 degrees
Spray a large baking sheet with cooking spray and set aside.
In a small frying pan, heat olive oil over medium heat. Add garlic and cook for 20 seconds, stirring constantly.
Add the spinach, salt, and pepper, cooking until the spinach is heated through and the garlic is evenly distributed. Remove from heat.
While spinach is cooling, remove the stems from all of the mushrooms.
In a separate bowl, combine the spinach with the feta and stuff each mushroom with about 1 tablespoon of the mixture.
Place the mushrooms on the pan and bake for 20-25 minutes.
