How to make the classic original traditional Caesar salad from scratch at home. Using the generally attributed creator Caesar Cardini ingredients. No anchovies, the slight anchovy flavour originally came from the Worcestershire sauce in which they are an ingredient. And emulsified with raw egg yolk which gives a much richer dressing than alternatives like mustard.
Grilled Chicken Caesar Salad Recipe
Ingredients:
2 Cloves of garlic
Olive Oil
Crusty Bread
Romaine Lettuce
1 Raw egg
Juice of 1 Lemon
Parmigiano – Reggiano Cheese
(AKA Parmesan)
Worcestershire sauce
Wine Vinegar – Red or White
1 Chicken Breast per person
Salt & Pepper
instructions:
Add 150ml of olive oil to a mixing jug
Add 2 crushed garlic cloves to the oil, if you can leave for 1 hour to infuse the oil
Cut the bread into 1cm cubes to make croutons with
Add the croutons to a baking tray, drizzle over 30 — 50ml of the garlic oil and cook at 200°C / 400°F for 15 minutes or until golden brown
Rub a little garlic olive oil over both sides of the chicken breasts, season with salt and pepper. Place chicken breasts on a medium-high heat grill. Grill until cooked through, at least 5 or 6 minutes per side depending on thickness.
Now to make the Caesar salad dressing add the yolk of 1 egg to the garlic oil
Add a dash of Worcestershire sauce
Add a tablespoon of wine vinegar
Add the juice of 1 lemon
Mix the dressing together until smooth
Add salt & pepper to taste
Chop the lettuce into bite size pieces
Place in a large mixing bowl
Add the croutons
Add some grated Parmesan cheese
Pour over some dressing and then mix together with your hands
To serve add some salad to a bowl
Grate over a little parmesan cheese
Slice a chicken breast and place it on top of the salad
