I made this at home and it was literally the best steak sandwich ever, I
like working at Waitrose.
This is making my mouth water, even though I’m not a huge artichoke fan or
like seeds in my bread. He unfortunately cooked his steak paste
medium-rare though; this is definitely a medium by the looks of it. The
residual heat cooks the meat another 10 degrees, and he took it off at 51
while saying he needed it to get at 55. Oops.
I started cooking my steaks in the restaurant this way last year and always
use a probe now. It never fails if you concentrate and follow it right.
Also you don’t get that horrible grey outer layer to the steak. So thanks
Heston! You really have changed the way professional kitchens cook
Heston himself says not to put pepper on the steak before cooking, as it
scorches. Don’t give up your standards just for advertising!
Oh shit that is the most delicious sandwich I have ever seen
