Githeri Recipe
Food Ingredients:
2 cups Corn, cut fresh off the cob 3 to 4 ears, or 2 cups Cooked beans, any type — 1/2 kilogram chopped beef 3 grated tomatoes 1 tea spoon tomato paste 1 large cubed onion 3 cloves crushed garlic curry powder 2 cubes carrots Water — to cover Salt and pepper — to taste
Recipe preparation:
1 Fry the onions and garlic till browned in some oil 2 Add in the meat and allow to brown all over 3 Add in the grated tomato and tomato puree and let it simmer for 4 mins 4 Add in the pepper and a teaspoon of curry powder and allow to simmer with the pot lid down for 4 mins 5 Toss in the carrots with a 1/4 cup of water and allow to simmer with the pot lid down for 5 mins 6 Add the corn and beans to the large pot with enough water just to cover. Season with salt and bring to a boil over medium heat. 7 Reduce heat to low and simmer until cooked through, 8 minutes. 8 Serve it up!
