Ginger Cake – African Recipes

Recipe ingredients and directions:

GINGER CAKE (SIERRA LEONE, WEST AFRICA)

2 cups sifted flour

6 Tablespoons sugar

3 Teaspoons ginger

1/2 teaspoon salt

1/8 teaspoons ground red pepper

6 Tablespoon butter or margarine.

4 tablespoon water or milk

Sift the dry ingredient together into a bowl (flour, sugar, ginger,

salt, ground pepper).

Rub in the fat thoroughly. Add the liquid and mix to a firm dough.

Roll out on a floured board about 3/8 inch thick. Cut into rounds.

Bake on a greased cookie sheet for about 15 minutes at 350 degrees.
