Field Peas
Food Ingredients:
2 cups water 8 ounces fresh chicken or turkey necks 1 medium onion chopped 1 garlic clove minced 1 teaspoon parsley 1 pound fresh or frozen field peas 1/2 teaspoon salt 1/4 teaspoon red pepper flakes Freshly-ground black pepper (optional), to taste
Recipe preparation:
1 In a large stockpot, boil the water. Add the chicken or turkey necks, onion, garlic, and parsley and boil for 15 minutes. 2 Add the field peas and cook until tender, about 30 minutes. Add the salt, pepper flakes, and pepper. Serve over steamed rice. 3 This recipe yields 6 servings. 4 Serving size: 1 cup.
