I’m not one for dirtying dishes unnecessarily, but I find the a potato
ricer works great for wringing out thawed frozen spinach. I’ll bet it would
work for the escarole too!

OK question for Laura or Laura diehard fans….. When this was made at
Christmas it really looked as though there was a sauce on top of the pizza
and then she added basil leaves. Did you add a pizza sauce Laura?

Excellent recipe! You call it a “stuffed pizza” — but Polish, Ukrainian,
Russian, Belorussian, Serbian, etc. people would characterize it simply as
a “pie”: stuffing completely or sometimes partially surrounded by dough
(not a classical American apple pie or such).
