Eggplant Parmesan Sandwich | Hilah Cooking

Eggplant Parmesan sandwiches are perfect for lunch or dinner. If you don’t want a sandwich, you can just have the eggplant parmesan with some pasta and it’ll be just as delicious! I also love to eat eggplant parmesan cold, right out of the fridge. Eggplant parmesan sandwich recipe at http://hilahcooking.com/eggplant-parmesan-sandwich/

I have a pet peeve about hearing people announce what foods they don't like. Especially because it is always publicly declared with such an air of pride. No one is ever capable of simply not eating the dish with the ingredient they are too ignorant to have developed an appreciation for: they must announce their ignorance to everyone, as if their willful refusal to learn to appreciate goodness should be catered to by others.

Where do people get off thinking you they have the right to dislike a staple of dozens of ethnic cuisines for generations? Let alone to be proud of it? It's like: show some shame for your deficiencies as a human being, already.

This whole post was totally serious and not a big exaggerated or hyperbolic ;-).

Much like you do, I use my cast iron skillet for pretty much everything.  But something to consider is that tomato sauces and other acidic foods can have a tendency to strip the patina from your cast iron.  Found that using a stainless steel skillet is better for your acidic sauces.  You may or may not have noticed the same, but figured I'd offer. Be Well and congrats to you your family with the baby! Got one on the way myself!
