Duck Slowly Cooked In Aromatic Spices

Food Ingredients:
2 wholes thawed young duck 10 cloves of garlic 1 teaspoon of vegetable oil 1 teaspoon of ground cardamom 1 teaspoon of ground cloves 1 teaspoon of ground cinnamon 1 teaspoon Quarter of salt Curry spices to taste 4 fresh chillies seed in 1 tablespoon of tamrind extract

Recipe preparation:
1 PREPARATION: Clean the duck by removing all the fat. 2 The ducks usually carry a lot of fat on them so it’s important to take it all out. Cut into bite size pieces. Wash thoroughly. Put aside. 3 Peel and grind the garlic, ginger and chilli together making it into a paste, mmmmm. 4 Finely dice the onions. 5 Wash and pluck the leaves of the cilantro stems. 6 Mix the curry spices, cloves, cinnamon, salt and cardamom together put aside. 7 COOKING: In a large pot heat oil on medium to high heat. 8 Once oil is hot add the onions and the paste to it and sauté it for couple of minutes till all the ingredients are golden brown. 9 The kitchen must smelling so beautiful with all these nice and tasty ingredients:) 10 Add the duck to this beautiful sauté and stir well. 11 Now add all the aromatic spices to this and mix well. 12 Oh my god the smell is so divine of all these special mixtures 13 I could dive into the duck right now but have to be patient .This dish takes a lot of tender loving care so patience my boy, LOL. 14 Cook on medium high heat for half an hour and add the tamarind extract now. 15 You may also add some water if you wish to have some nice gravy with this dish. 16 After cooking for half an hour lower the heat and simmer for an hour the duck 17 Should be nice and tender and juicy. 18 Garnish your duck with the cilantro leaves 19 Now is the time to dive in LOL. Enjoy the nice flavours!
