Recipe Title: Sweet & Sassy Chicken lollipops
**’Safety is paramount. Every grill is different, please follow your manufacturer’s instructions and recommendations.**

Prep Time: 20 minutes
Cook Time: 40 minutes
Total Time: 1 hour
Servings: 4-6

Ingredients:

2 pounds chicken drumsticks
4 tablespoons Butchers BBQ Honey Rub
4 tablespoons Smokey Mountain Smoker’s Chipotle BBQ Rub
Canola oil

Glaze
½ cup Sriracha Hot Chili Sauce
½ cup Sweet Baby Ray Hickory & Brown Sugar BBQ Sauce

Instructions:

In a small bowl mix the Sriracha sauce and bbq sauce and set aside.

Cut around the thin end bone tip of each chicken drumstick.

Separate the skin and tendons attached to the narrow end of the drumstick and push the meat down toward the thick end. You now have a “lollipop.” Repeat procedure for the rest of the drumsticks.

Generously sprinkle the drumsticks with Butchers BBQ Honey Rub and Smokey Mountain Smoker’s Chipotle Rub.

Preheat your grill to medium high heat 375F and generously oil the grill grates.

Grill the chicken for 20-30 minutes, turning often until the internal temperature reaches 165F.

Glaze the chicken. Grill for an additional 10 — 15 minutes to set the sauce. Remove from grill and serve.

Tips:
You can wrap the ends of the lollipops with foil to prevent the bones from becoming dark and sticky. Remove foil pieces prior to serving. Oiling your grill helps to prevent sticking. Choose oil that has a high smoke point of at least 400F. Sunflower, peanut and safflower all have high smoke points as well.
