What size of a crock pot does this recipe call for?
Have you ever had any issues with the carrots being placed in from the
start and slowly cooked for 6-8 hrs? I have seen on some places that its
best to throw them in about an hr prior to finished roast… Any feedback
would be awesome.

Nice touch by thickening the sauce for gravy. You could easily double the
sauce for some awesome opened faced Roast Beef Sandwiches with veggies on
