This is such a good recipe and a welcomed side for grilled foods.
I wish for a vegan dish that could use peanut butter / beans / squash /spinach /egg plant; not necessarily together!
This is close to Turkish appetizer which is called "Piyaz". But of course we use fresh boiled beans instead of canned one.
With thinly fine-julienne sliced red onion, that would be awesomely better.
Love the freshness of this recipe. I will make it with parsley, as I cannot stand cilantro. Regret to say a common mistake was made here… dressing should have been mixed separately and added to the mix.

actually, @loupesurleMonde , he used cilantro but he adviced people to use parsely
