Cilantro Lemon Chicken – Moist Chicken Breast Recipe

A delicious recipe for moist, juicy, and tender chicken breasts! Recipe below:

Marinade:
3 cloves of garlic
Zest of 2 lemons
1/4 cup cilantro (or parsley, mint, or basil)
1/4 cup scallions
1/4 cup fresh lemon juice
1 tsp. red pepper flakes
1 tsp. salt
1 tsp. black pepper
1/3 cup olive oil

1- 1 1/4 pound chicken breast

Process until smooth. If too thick, add more olive oil or lemon juice. Butterfly chicken to create 4 cutlets. Cut shallow slits to allow marinade to infuse in. Be careful not to cut all the way through the breasts! Marinate for 4-6 hours or overnight. Wipe off excess marinade and place on unlined baking sheet. Broil on HIGH for 12-15 minutes or until a thermometer reads 165F.
