Genuine question…. If you weigh out the ingredients perfectly to the
gram, how can the final mixture be too thick and in need of milk?

Comes out of the oven with a peak like Mt. Fuji….
that looks lush… a little tip for people trying it out… if you get a
good solid metal garlic crusher (like the ones they sell at Ikea) then you
can crush the ginger through it if you cut the ginger first into cubes
about the size of a garlic clove. Saves on the grating and gets the same
results.
Don’t do it with a supermarket garlic crusher – they break too easily.
I’ve never seen a sponge cake made the same way as a regular cake. Most
people would fold in some fluffed egg whites.
