This week we are releasing a new video recipe early in time for Valentines
Day. In our 269th Video Recipe Stephanie demonstrates how to make Chocolate
Mousse Cakes. These individual Chocolate Mousse Cakes take small rounds of
a moist and dense flourless chocolate cake and tops them with a swirl of
chocolate mousse. They look especially eye popping when you garnish them
with a bright red raspberry. Many will appreciate that this is a gluten
free dessert. They have a rich chocolate flavor and a moist and dense
texture that is a cross between a cake and a souffle. You can serve these
pretty cakes as a plated dessert with a drizzling of raspberry sauce, or
they can be picked up and eaten like you would enjoy a cupcake. Happy
    Valentines Day!

Replace the raspberry with a chocolate chunk so it’s triple chocolate!

    I’m completely agree with @Sandy 2806

Looks amazing! Can I use semisweet morsels to make both the cake and the
    mousse?

If you mix the egg whites in more than one direction don’t they deflate?

Excellent recipe ! I made it today and it is really a treat : deep
chocolate taste, chewy in the middle, crispy on the sides, double chocolate
with the cream on top, raspberry and chocolate is one of the best matches.
Thank you for your videos Stéphanie, I have loved them since the very first
one I saw, great tutorials. I have learned a lot from you, baked many of
your cookies and other recipes and they always were a success.

+Joy of Baking can i substitute white chocolate to make a baked white
chocolate mouse cake? Im thinking of combining 2 layers – 1 choc and 1
vanilla+white chocolate mouse and sandwiching and freezing in stiff whipped
light choco mouse using whipped cream butter n small portion chocolate
    ganache. Would that result fine?

  15. Dani B

I was so amused by the dog making a cameo in the video! :D

I love it that you always mention the amount of the ingredients in gram and
milliliter. Makes it so much easier for the non-US-viewers and makes your
channel stand out against others. Thank you! Greetings from Germany! ^,^

You can actually fix over-whipped cream by adding a couple drizzles of milk
or cream and then whip until it becomes smooth and glossy.
