Chocolate Chickpea Blondies (Vegan & Gluten-Free)
Food Ingredients:
Canola, sunflower or unrefined coconut oil 15 ounces (1 can) garbanzo beans, drained and rinsed 1/2 cup brown rice syrup 1/2 cup apple sauce 1/4 cup almond or peanut butter (crunchy is best) 2 teaspoons vanilla extract cup ground flax seeds 2 tablespoons brown rice flour 1/2 teaspoon baking powder 1 cup non-dairy chocolate chips
Recipe preparation:
1 Preheat oven to 350. 2 Lightly coat an 8-inch baking pan with oil. 3 Combine all ingredients, except chocolate chips, in a food processor. Blend until smooth, scraping the sides a few times. 4 Pour the batter into the pan and stir in the chocolate chips. 5 Bake for 25 minutes. 6 Cool to room temperature on the counter, then refrigerate for at least 30 minutes before slicing into 9-12 squares.
