30 pieces of thick wonton wrappers
3/4 pound of mix pork shoulder and peeled shrimps, 1/4 cup of chopped cilantro, 3 TBS of chopped shiitake mushroom, a pinch of salt and white pepper, drizzle sesame oil, sherry cooking wine, 1/2 tsp of oyster sauce, 1/2 tsp of minced ginger, 1/2 tsp of minced garlic and 1 beaten egg.

marinate the protein with 2 tsp of egg white and 2 tsp of cornstarch

    If you add too much meat it will not have a good texture, just a tip to anyone making these for the first time. Put the amount Chef Tom does, I have done it with more many times and it just turns into a solid clump of mush which is not pleasant.
