Chickpea Salad
Food Ingredients:
2 cans chickpeas 1/2 teaspoon crushed garlic 1/2 cup chopped red onion 3/4 cup fresh parsley 3 tablespoons chopped mint leaves 1/2 cup fresh lemon juice 1/2 cup olive oil Salt and pepper to taste
Recipe preparation:
1 Drain peas; add remaining ingredients in wide bowl – add peas and toss well; chill. May be refrigerated 1 or 2 days to allow flavors to blend. Garnish with red onion.
