    Sorry for the delay–I didn't see this comment! I wash mushrooms in water, but you're correct, they do absorb quickly, so I make sure to dry them with paper towels immediately after washing them. Mushrooms are composed of about 80% water, so if you're going to cook them right away, don't be too concerned about getting them thoroughly dry. Mushrooms reduce while cooking due to evaporation (which is also why they taste more "mushroom-y" than raw ones!).
