Caribbean Chicken Curry

Food Ingredients:
1 1/2 pounds boneless skinless chicken breast, cubed 4 apples 1 cup grapes, whole 1/2 cup raisins 1 red bell pepper 4 carrots 2 cups your favorite yellow curry sauce 2 teaspoons Jamaican all spice salt pepper 6 cups brown rice

Recipe preparation:
1 Peel the carrot, cut into a fine dice. Core and seed the bell pepper, cut into a fine dice. Core the apples, and chop into 1/2 inch cubes. Put in water to prevent browning. 2 Cube chicken breasts into 1 inch cubes. Season cubes with salt, pepper, and allspice. Heat oil in pan, add chicken. Cook through. Remove chicken and reserve. 3 Add bell pepper, carrots, an raisins to still hot pan, soften. Add apples and grapes, chicken cubes. Pour your favorite yellow curry sauce over everything. 4 Because the apples will release liquid, if the sauce is too thin, cook uncovered on high for a few minutes. 5 Serve over rice.
