Vegan burrito shells
1/2 brick extra firm tofu
Smart Bacon: http://www.lightlife.com/Vegan-Food-Vegetarian-Diet/Smart-Bacon
1/4 onion
1 tomato
1 potato
1/2 tsp Thyme
1/2 tsp Basil
1/2 tsp salt
1/2 tsp pepper
1 tbsp Hot Sauce
1 tsp turmeric
1 tsp Garlic Powder
1/4 cup Daiya Cheese

Start with 2 tbsp olive oil on med heated pan
dice potato and add to heat
1/2 tsp salt and pepper
dice up Smart Bacon and onion
add onions and smart bacon
crumble up tofu into pan
add spices and hot sauce
Add tomato diced
Add the Daiya Cheese
Steam Shells and roll filling into burritos
