Bobotie 08 – African Recipes

Recipe ingredients and directions:

Bobotie

1 slice white bread

1 cup milk

1 lb. lean ground beef

2 tblsp. seedless grapes, minced

1/2 cup fruit chutney

1 tbsp. mild curry paste (or 1/2 tbsp. curry powder)

1 onion chopped

1/2 cup chopped fresh apricots or sugarless apricot jam

1/4 tsp. turmeric

1/2 tsp. salt

1/2 tsp. black pepper

1 tbsp. lemon juice

1 tbsp. vegetable or olive oil

3 eggs

2 bay leaves

Soak bread in 1/2 cup of the milk for 3-4 minutes. Squeeze out

milk from bread and in a large bowl mix bread with the meat. Mix

in grapes, chutney, curry paste, onion, apricots, turmeric, salt,

pepper and lemon juice. In a large skillet, heat the oil. Saute

the beef mixture, stirring frequently, until brown. Transfer to

9 x 12 inch casserole dish. Beat remaining milk and eggs together

and pour over the meat. Place the bay leaves on top of the mixture

and bake, uncovered, at 375 degrees for 20-25 minutes until browned

on top. Discard bay leaves.
