To all the young aspiring chefs……… Work for this guy. He is the real deal. Very grounded and fair, but firm. Chef Bertineau is one of the last of the old school chefs in this country. Pretty soon everyone will be using lazers, immersion circulators and other crazy techniques in the kitchen. Learn "the Classique" from someone who is a true guardian of what might become a lost art.
