Bananes Pèsé
Food Ingredients:
2 cups vegetable oil 2 medium very green plantains, peeled and cut crosswise into 1- inch slices Bowl of salted water Salt to season
Recipe preparation:
1 Put the slices of plantain in the bowl of salted water to soak for a few minutes. 2 In a medium sized pot, in about 2” of the oil, fry the plantain pieces until golden brown; remove with a slotted spoon onto paper towels to drain. 3 Press each piece with the bottom of a round glass to flatten. 4 Dip the slices in the bowl of salt water again. 5 In a heavy 12-inch skillet, heat ½-cup oil over moderate heat. 6 Add as many plantain slides as you can without crowding; brown 2 minutes on each side, transferring to paper towel to drain. 7 Sprinkle with salt and serve at once.
