Atkins Diet Recipes: Low Carb Chicken Cordon Bleu (IF)

In partnership with FaveDiets ( http://www.FaveDiets.com ) recipe site, I wanted to release what I was experimenting this week in the kitchen. I had a bunch of extra chicken breasts, which are notoriously dry and flavorless, and I was trying to find a way to liven them up. I had some ranch dressing and cheese, and I wanted to find a good way to combine them a bit fancier than just cheese on top of chicken like a cheeseburger.

I got the idea of stuffing the chicken from many videos on stuffing things like pork chops. It worked better than I could have hoped.

Ingredients:
3 Chicken Breasts
3 oz Swiss Cheese
4 oz Smoked Ham, deli-sliced
1/4 cup Ranch Dressing
3 tbsp Broccoli Slaw
Salt / Pepper to taste
Makes 3 servings

Nutrition Facts per Serving):
570 Calories, 29g Fat, 3.4g Carbs (1g Fiber) , 75g Protein

    Hey, Kent, Tried to reply to your reply, but YouTube is screwing up; anyway, made 7 of these but took some liberties: Used prosciutto ($24 a lb! fortunately only needed 7 shaved slices) & peppers rather than ham & broccoli, and baked it b/c I had to bake my breakfast casserole and wanted to use the oven heat for two dishes. Not as brown as yours, but still looks & smells amazing. Now I'll freeze them individually & reheat as needed. Thanks!

    @Vittoria10538 That is the great thing about this recipe. It is only limited by your imagination and ingredients. The only reason I settled upon the ones I used was because I wanted to make something someone would recognize and encourage their inspiration to take them elsewhere. Yours sound delicious!

    @majasmagic I try to put into the ingredients at the end and the video description how many servings it is. "Makes 3 servings

    @bonitatina90 Broccoli slaw is finely sliced or chopped Broccoli stems — often mixed with carrots as well. It's main purpose is to make a coleslaw like except with Broccoli instead of cabbage.

    The real cordon bleu receipe as no vegetables, no cream. It's chiken, pork, melt cheese. American are so crazy sometimes. :/

    i have tried this recipe in the past and it was good but does any broccoli slaw come without the carrots and red cabbage? the slaw you have in the video looks all green. when i made it i picked out the carrots and red cabbage that was in with it but it left very little broccoli slaw after that.
