Apricot Glazed & Stuffed Pork Loin Roast Recipe ~ Noreen’s Kitchen
Greetings! Today I am sharing with you a wonderful stuffed, rolled pork loin roast that we will fill with aromatic bread crumb and dried apricot stuffing and glaze the whole thing with some homemade apricot pineapple jam. This roast is the bomb!! When roasted just right the glaze give the meat a wonderful bark that is hard to resist.
I have previously showed how to roll cut the pork loin in another video and you can check that out here: http://bit.ly/1maWFew
This recipe can be made to your preference, with any type of dried fruit or seasonings. Apricot and pork go together very well. If we were doing this for a Thanksgiving or fall dinner I would most likely stuff this with dried apple slices and raisins like my mom used to do with her stuffed pork chops. This was simply amazing and super easy to do. In the end, this will be the highlight of any Easter table or any dinner for that matter!
You won’t believe how simple this dish is to prepare and you can bake off a couple of nice side dishes at the same time the roast is in the oven like Scalloped sweet potatoes, http://bit.ly/P9EJCg or buttery dill glazed carrots: http://bit.ly/1eFasHA
I have used homemade apricot pineapple jam thinned down with a bit of home canned chicken stock but you could use plain apricot, pineapple or any flavor jam you like that will go well with the pork. Plum jam would be lovely as well and you could even stuff the pork roast with delicious prunes!
I hope you give this roast a try and I hope you love it!
Happy Eating and happy Easter!

I love your channel!!!! I happened to come by you and you are so real and i love your cooking.
Would you consider doing a video on how you keep your pans so clean? They always look brand new!
Thanks for this. This is awesome! Happy Easter :-)
This looks AMAAAAZING!!! I only wish my b/f ate meat with fruit. For some reason, he absolutely refuses. My have to make a couple pork chops one night as an alternative and leave him with just a plain jane one. LOL. Thanks for sharing and Happy Easter.
