Almond Chocolate Truffles
Food Ingredients:
3 ounces unsweetened chocolate, grated 1/4 cup butter, melted 2 tablespoons whipping cream 1/4 teaspoon almond extract 7 tablespoons confectioners’ sugar, sifted 2 tablespoons finely ground almonds Cocoa or ground almonds, for garnish
Recipe preparation:
1 Melt the grated chocolate with the butter in a heavy saucepan over medium-low heat 2 Add the whipping cream and almond extract 3 Gradually stir in the sugar and almonds and cook until the mixture is smooth 4 Remove the mixture from the heat, cover and refrigerate for 24 hours. 5 Remove from refrigerator and hand-roll into individual teaspoon-sized balls 6 Roll the balls in cocoa or ground almonds 7 Refrigerate until ready to serve
