Vegan Pizza Recipe [Low Fat, Gluten Free, No Salt or Oil]

Anji’s back in the HHV kitchen for another healthy recipe demo! An informal Facebook poll on what Instagram meal you most wanted her to demo lead to today’s episode; the ever popular Vegan Pizza!

This pizza is low fat, salt free, oil free, gluten free and dairy free with no cheese substitutes – but its not lacking in flavor or substance. With a thick corn meal crust and loads of veggies (and technically, fruit…) plus some key herbs, this unique pizza is satisfying and healthy, too. And honestly, its pretty darned easy to make! Name your fave toppings in the comments below 😀

INGREDIENTS:

Crust:
2 cups organic corn meal
4 cups water

Sauce:
1.5 to 2 cups organic tomato sauce
1/5 lemon, juiced
1 tsp mixed herb blend (Italian herb mix, preferably)
1/2 tsp dried basil
Black pepper to taste

Toppings (your choice!):
Arugula or Spinach julienned if not baby leaves
Tomatoes sliced or diced
Mushrooms sliced or diced (I used Crimini)
Broccoli sliced
Bell pepper sliced or diced (I used Red)
Olives sliced (I used raw Botija olives)
Fresh Basil julienned
Avocado sliced or diced (I used Zutano)

    Thank you!!!! I am just starting my oil-free vegan journey (have been
    vegetarian for a few months now) and having some difficulty cooking for my
    husband who does NOT want to be vegetarian. I have found several recipes we
    can both enjoy, but pizza was going to be difficult. Trying this recipe
    tonight! Was wondering – can I use the store-bought quinoa polenta? I
    happen to have some on hand…..

    I like to grind my own cornmeal but since all of the corn today is GMO
    except for popcorn (and organic cornmeal from the health food store) I use
    popcorn. I grind the whole kernels into meal and it tastes absolutely
    delicious! And if I want a fabulous corn flour, I pop the corn and then
    grind the popped corn. It’s light and airy. Be careful when pouring it…
    it will fly into the air!

    I made this last night and cooked it till it was very very thick. I ended
    up using grits because that is what I had on hand. It came out nicely, not
    as sturdy as a wheat flour pizza dough but my entire family gave it a total
    thumbs up! My cats even liked it, they were licking the bowl. I took a pic
    on Facebook and will try to see if I can post it to HHV. Thanks for sharing
    Anji, I would love to see more recipes from HHV.

    where I could cut slices. It came out in globs 🙁 Any suggestions?

    I actually prefer vegan pizza to vegetarian pizza. Ever since my milk
    allergy got worse, I’ve been ordering vegan pizza whenever I need to order
    something that will arrive quickly and it actually tastes much better than
    I thought it would! :)
