Traditional Caribbean Chicken Foot Soup Recipe

Chris De La Rosa of CaribbeanPot.com shares his take on traditional Caribbean chicken foot soup. In the Caribbean we use the entire chicken, so making a soup with the feet are something that’s quite natural. Seasoned with fresh herbs, thick with ground provisions like sweet potatoes, eddoes, potatoes, green bananas and finished with flour dumplings, this is a wonderful one pot dish.

For this chicken foot soup you’ll need…

1 lb chicken feet (cleaned and trimmed)
2 chicken stock cubes
1/4 teaspoon black pepper
4 green cooking bananas
5 small eddoes
2 medium sweet potatoes
2 potatoes
water
1 tablespoon veg oil
1 large onion
4 cloves garlic
1 scallion
4 sprigs thyme
1 scallion
2 cups diced pumpkin
salt (taste and adjust accordingly)
1 scotch bonnet pepper
2 medium carrots

* You can add flour dumplings, yams, cassava, dasheen and other ingredients to personalize this chicken foot soup.

    This looks very tasty!  One question…  The first time you say to skim the soup after adding the feet,  how can you skim it without removing all those lovely sautéed  vegetables, i.e. garlic, onion, etc. ???  Pretty hard to skim around those floating on the surface too!

    i respect what you're doing,BUT you are a little to BOURGY!here you are cooking with ground provision that whit people would find weird and you are looking down on chicken feet!! these are food made out of survival! Don't forget where you come from!! no hate just my opinion!
