I never knew that baking soda “spreads” and baking powder “puffs”
(neeewb!). I just thought that both makes baked goods puff up. Interesting
and good to know! No wonder my cookies are always puffy and not spreading
much. I use baking powder predominantly. GREAT GREAT INFORMATION!!
Loved the video!!!! Could you do a video on fudgy chewy brownie vs soft
cakey brownie?? Some recipes call cocoa powder instead of melted chocolate
chips, some require bp or no bp. Also why would brownie mix requires oil
instead of butter? Would using oil make the brownie more fudgy? I always
liked brownies made from premix but whenever i decided to bake it from
scratch it always ends up being too cakey.
Joseph I add anywhere from 1/2 cup to 1 cup of cake flour to my cookie
dough, besides the purpose flour. It makes my cookies soft and gooey.

for some reason mine always comes a bit dry. it is always soft but the
dough just seems dry. any ideas how to fix?
Thank you! I Have been flumoxed by my thin and crispy cookies that I wanted
to be soft and chewy. Someone at my church told me it was because I used
butter, but I knew so did others who attained a more substantial cookie –
you could taste it in those cookies! They weren’t made with shortening or
oil, but what made theirs different from mine, which I got the recipe from
the Joy of Cooking and the back of the package of Nestel semi-sweet chips.
Now I know! And I learned it from the hottie Thomas Joseph in thi video. He
looks delicious too.
Whenever I make macarons I get the feet, but when I bite into them, they’re
hollow! Please explain this because I really don’t wanna fail next time!
Hi! Im really having a hard time making the perfect soft and chewy cookies,
i followed everything but when I bake, the bottom of the cookie gets cooked
but the upper doesnt. Im using a manual oven, so i have to light up the
oven on my own and I put the cookie inside when I feel that the oven is hot
already.

I did the thin and crispy chocolate chip cookies last night, they taste
amazing! The recipe says bake for 15 mins, but they did crispy only the
edges, was chewy in the center. I tried to bake my second tray for 25 mins,
they came out perfect, every bite was crispy. The only problem is the
cookie dought melted very fast in the oven, became a very large cookie.And
they did not shape as well as you did in the video. Could you solve this
for me? Thanks…

I made the soft and chewy they came out pretty good. But now after several
days they are very hard.
I made this and they were perfect i made large ones thank you soooo much
I made the soft and chewy cookies just now and they turned out wonderful!
All I have to say is to closely monitor them because they burn very easily.
Even 1 extra minute can burn them. Also, for me, 2 cups of chocolate chips
were way too much. Finally, space them out more than you think they need to
be, they spread out A LOT!
