Tasty and Easy Meatloaf Recipe

This is a quick and easy meal that everyone likes (even kids). The variations are endless.
I sometimes will make a box of stuffing mix and place it in the center of the loaf so that you get a “stuffed” meatloaf, I also sometimes add cubed cheese to make it a cheesy meatloaf.

Recipe in the video.

2 eggs
1/2 cup dried or fresh breadcrumbs
1/2 cup milk
1/2 cup oats (large flake or quick cooking)
1 tsp salt and pepper
1 tsp garlic powder
1 tsp Worcestershire sauce
1 1/2 pounds ground beef (if you use 1lb, just reduce the other ingredients)

Mix the meat with the above ingredients until well combined. Pat into a loaf shape and place in a greased baking pan (loaf pan works too).

Sauce

1 cup ketchup
2 tbsp brown sugar
1 tbsp mustard (whatever mustard you want)
1 tbsp Worcestershire sauce

Mix sauce ingredients and pour over top of meatloaf.
Bake at 350F for about an hour or until a meat thermometer inserted in the center reaches 160F.
Let rest 10-15 minutes (this will make it easier to slice) and serve!

Mashed potatoes, to me, are a must to go with meatloaf!

Another variation I sometimes use:
Mix one box of stuffing mix into the meat with the eggs (quick and easy seasoning, no measuring)

We purchase our ground beef already ground. It comes in a package with the words "ground beef" on it (extra lean, lean and regular). It does not describe the kind of cut that was used to make it. I'm going to guess that it is a cheap cut of beef.

I made this just now, but since I was pressed for time I baked them in a muffin pan so they would cook faster 🙂 Man, are these good! Super quick (my way lol) and deeeelicious Will be making this many times, I'm sure!

I find with meatloaf, it is easier to mix when you soak the oats and breadcrumbs in the milk beforehand..it mixes faster that way, too and makes the meatloaf softer cause u don't have to work it through as much 😀

Thats a really good idea about shaping the meatloaf like a boat. I always hate when the sauce falls off. I'm going to try that!!!!!

Use the paddle blade on your Kitchenaide mixer if you have one…it works perfectly.
