Skillet Potatoes Recipe

Ingredients:

3 cups of red potatoes
1/2 of an onion chopped
1/2 cup red bell pepper, chopped
1/2 cup green bell peppers, chopped
handful of parsley, chopped
salt and pepper

Directions:

start by boiling the potatoes until it is soft, about 10 minutes
remove, drain, and let the potatoes cool.

dice potatoes into cube.

saute onion, red and green bell peppers until onions are translucent and brown – about 5 minutes.
remove from pan and set aside.

add potatoes to greased pan, cook for 5 minutes until golden brown. return onion and peppers back to pan and continue cooking 3 more minutes. add in the chopped parsley and stir. season with salt and pepper and serve.

*serves 4

    hi! the skillet is by le crueset and you can get it at sur la table or amazon. the knife is by a company called cutco! 🙂
