INGREDIENTS
500g beef mince
500g pork mince
100g freshly grated parmesan cheese
2 cloves garlic, peeled and finely chopped
150g breadcrumbs
4 medium eggs
a handful fresh chopped parsley
2 tsp ground fennel seeds
2 tsp salt
1 tsp ground black pepper
125 fresh mozzarella
50g sweet chili sauce (optional)

METHOD:
Preheat the oven to 180C. You will need 2 loaf tins for this recipe. Place beef, pork, parmesan, garlic, breadcrumbs, eggs, parsley, fennel seeds, salt and pepper into a bowl and combine together. Place 1/4 of mixture into loaf tin and repeat with second loaf tin . Then shred the mozzarella equally divided between each loaf tin and then top them with the remaining meat mixture. Brush half the sweet chili sauce on top and place in oven to cook for 1 hour or until cooked through. Brush remaining chili sauce on top and slice and serve with mashed potatoes or polenta.

Ohhhhh Michela!  This looks DELICIOUS!  This is definitely on the menu for Friday night!  I think I'll surprise the children with it.  They all love meatloaf and I'm sure they be excited for this new version!  Thanks!  Ohhhh by the way, I LOVE the new cookbook!  It arrived earlier today! 🙂  CHEERS!

Glad you clarified about the chili sauce at the end. My Mom would make a mixture of 4 tablespoons of catsup and 1 of dark brown sugar to go on the top of the meatloaf. It was a thick caramelized sauce, and so freaking good. As long as it didn't burn. The cheese is a brilliant idea.

I'm going to make this – I love meatloaf, and really liked the addition of the fresh mozzarella – so amazing. The glaze also looked beautiful, and I totally covet the iron plate you placed the hot dish on! Big thumbs up.
