South Texas Slow-Cooked Pinto Beans
2 Cans (15oz) Pinto Beans (juice and all)
1/4 lb Smoked Bacon, chopped
1 jalapeno pepper, seeded and chopped
1 whole roma tomato, seeded and chopped
1 whole small yellow onion, chopped
1/2 bunch Cilantro, washed and chopped
1 tsp Morton’s Nature’s Seasoning Blend
Chicken/Vegetable Broth or Water (as much as you like, depending on how “soupy” you want this recipe_
In a slow cooker or pot, put all ingredients in and cook on a slow simmer for about an hour. I like to cook mine on the stovetop. I also like to saute the pepper, onion, and bacon for a couple of minutes before adding everything else. I also like to add in the cilantro during the last 15 minutes of cooking time. Enjoy!
