Speck is nothing like a pancheta. Speck is a specific muscle that is taken
from the prosciuto. Speck is amazing.

I’ve liked all your suggestion and I hope to find a little time to try all
of them on a new burger or on a new version of this one.
Except the sauce, the only thing that you have chanced of the burger was
the missed spinach between speck and parmigiano, but in this case with a
sauce so full of great flavours (and very interesting) maybe it was a good
choice to delete them from recipe.
As always, thank’s for your great job, a lesson for everyone.
