If the peaches (or other fruit/veg) are too ripe to peel with a regular
vegetable peeler…..the tomato peeler in those ‘peeler trios’ works like a
charm. They really save tomatoes that are a touch overripe with that nasty
wrinkled skin.
That is a particularly purdy peach pie you presented.
…and I had to laugh when you added cayenne. Wouldn’t be Chef John’s
desert without cayenne ;)
